Egg less cake - Vanilla Flavor


I'm back with a bang after 2 months (i guess). This time i have come up with a real new surprise recipe...Bcoz i never thought i would try it and the output is real good. Now i've got confidence that i can BAKE ;-)

Butter 100 gms
Milkmaid 1 tin 400 gms
Maida 150 gms
Baking powder 1 teaspoon
Soda bicarbonate 1 teaspoon
Aerated soda 150 ml
Vanilla essence As required usually 1 teaspoon
Tutti Fruity & Cheries

For Butter cream Icing
Butter 100 gms
Icing sugar 200 gms

For decorating
Dairymilk Chocolate bar 1


1. Seive together Maida , Baking powder & Soda bicarbonate for 4 - 5 times and keep it aside.
2. Take the softened Butter in to a large mixing bowl and beat it well and add Milkmaid condensed milk and beat well. Let them both blend in to each other.

3. Now add a teaspoon full of Vanilla essence or any other flavor mix well.

4. Add the maida mixture (maida + baking powder + soda bicarbonate seived 4 or 5 times) and add little to the butter & milkmaid mixture. Then pour little aerated soda and mix well.

5. Alternately add maida mixture and aerated soda to the batter until flour and soda gets used up. Beat thoroughly. Now you can add tutti fruity pieces, cherries and nuts in to the mixture (optional).

6. Grease the baking dish with butter and dust with flour.

7. Pour the batter in to the baking dish.
(as it is eggless cake, the batter should not be so thick. if it is too thick, add little water (2 to 3 teaspoons)

8. Set the Microwave mode - power 80% and bake it for 8 mins.
(Since mine is Microwave Owen with Grill, i'd to choose microwave mode)
9.  Allow the cake to cool and check by putting a toothpick or knife in to the middle of the cake . If it comes out clean, the cake is done. If it is not, bake it for few more minutes.
10. I wanted the cake to get brown on top layer, so i took the cake out of the baking dish and put it on a microwave proof plate (correlle) and baked it again for 3 more minutes. (This is optional).

Icing on cake

1. Take the softened butter in to a large bowl and add icing sugar and mix.

2. Add little milk to loosen it . Now you can add any flavor of your choice (if you want).

3. Mix Butter and Icing sugar well so that they blend in to each other well.

Now that, the cream is ready, you can start putting the cream on to your cake.
place the cake on a plate.
Take a stainless steel ruler and dip it in water. Take some icing with the ruler and put it on the cake.
Spread the cream evenly, first to the sides of the cake and then on the top of the cake.

Decorate the cake with cherries or fruits or whatever topping you like.
And here it comes...MY First Cake

* Since i don't have any other flavor or food color with me, i took a few spoons of cream separately and mixed it with dissolved dairy milk chocolate. Prepared a cone with plastic cover and filled it with the dairymilk mixed cream. I used that cone to write the letters and put design on the cake.
